Every bag of Ethiopian Sidamo leaves our shop in Irqah, Riyadh with its history on its face. The cherries were grown in Sidamo, Ethiopia, harvested when the fruit told the picker, not when the calendar did, and washed, then dried before they ever met our roaster.
Origin
Sidamo in Ethiopia is not a name on a map to prove provenance — it is an environment where the cherry earns its constituents.
Process
Washed processing: the fruit is removed from the seed before drying.
