Every bag of Brazilian Mogiana leaves our shop in Irqah, Riyadh with its history on its face. The cherries were grown in Mogiana, Brazil, harvested when the fruit told the picker, not when the calendar did, and dry-processed on raised beds before they ever met our roaster.
Origin
Mogiana in Brazil is not a name on a map to prove provenance — it is an environment where the cherry earns its constituents.
Process
Natural processing: the cherry is dried whole around the seed before hulling.
