Every bag of Colombia La Palma leaves our shop in Irqah, Riyadh with its history on its face. The cherries were grown in La Palma, Colombia, harvested when the fruit told the picker, not when the calendar did, and fermented anaerobically, then dried before they ever met our roaster.
Origin
La Palma in Colombia is not a name on a map to prove provenance — it is an environment where the cherry earns its constituents.
Process
Anaerobic processing: the cherries ferment in sealed, oxygen-free tanks before drying.
