Every bag of Indonesia Maro leaves our shop in Irqah, Riyadh with its history on its face. The cherries were grown in Maro, Indonesia, harvested when the fruit told the picker, not when the calendar did, and fermented anaerobically, then dried before they ever met our roaster.
Origin
Maro in Indonesia is not a name on a map to prove provenance — it is an environment where the cherry earns its constituents.
Process
Anaerobic processing: the cherries ferment in sealed, oxygen-free tanks before drying.
